Grandma Ella's Bran Muffins

Several months ago I bought oat bran and wheat bran in the bulk food section in anticipation of this recipe and just never got around to it!

With a need for a "new baby" meal and other opportunities to share homemade food, I went for it!

My Grandma Ella (Hansford) Watson was such a great cook!!  She was known far and wide for her cinnamon rolls, bran muffins and pies.  Every family member knew her as someone who "pushed" seconds and thirds at meal time and the great grandkids knew her as "money in the birthday cake" grandma.  Just making these muffins brings back such great memories of Grandma Ella.  She and I had an uncommon bond and I love her dearly!

 
Grandma Ella’s Bran Muffins

1 c. oil - used 1/2 c. Oil and 1/2 c. Margarine
3 eggs
1 c. brown AND 1 c. white sugar
3 c. flour
3 t. baking powder
3 t. soda
2 t. salt
3 c. buttermilk - used plain yogurt, milk and 1 T lemon juice
3 c. natural bran - used 1 c. Each oat bran, wheat bran and ground flax
Apple, dates, raisins - optional


Mix buttermilk and bran - let stand.  Mix oil, eggs, sugars, soda, salt.  Combine flour and baking powder with bran mixture then with liquid mixture. Folded in 1 apple, peeled and shredded.   Bake at just under 400 degrees for about 15-20 min in greased muffin tins.  Made 2 doz. Regular muffins and 4 dz mini muffins.  Cool in pans 10 minutes before popping out.  The muffins flattened while cooling.  Browning differences were totally the pan.  Dark aluminum didn't brown the muffins and light aluminum air bakewear did.
